Recipes - Moong Bean soup

Ayurveda is not just a system of medicine used to treat illness. It also focuses on prevention of disease, maintaining health and longevity through Dinacharya (daily regimen), Ritucharya (seasonal regimen) and dietary modifications. 

Ayurvedic texts describe dietary guidelines that vary by season, body constitution, and health goals. One such preparation is Moong Bean soup which helps to balance all three doshas and detoxify our body. This recipe is light and easy to digest. The spices in the recipe boost the digestive fire which is indicated in fever, hyperacidity, diarrhoea, and other digestive disorders.

Ingredients:

  • 1 cup Moong beans (soaked overnight)
  • 1 tablespoon ghee
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/4th teaspoon asafoetida
  • 1 teaspoon garlic, finely chopped
  • 1 teaspoon ginger, finely chopped
  • 1 pinch of turmeric
  • Rock salt as per taste
  • 5 cups of water
  • Coriander leaves for garnishing

Directions:

  • Take the soaked moong beans and cook for 20-30 minutes in 4 cups of water on medium flame along with turmeric and salt.
  • In a separate pot heat ghee. Once heated add mustard seeds and cumin seeds and let it flutter. Now add asafoetida, ginger and garlic.
  • Add this mixture to the cooked moong beans and continue to cook for another 2 minutes. Add rest of the water whilst cooking.
  • Garnish with finely chopped coriander leaves.
  • Adjust the thickness as per consistency needed by adding water.
